A wok is a combination of a frying pan and a pot. It allows you to instantly fry a dish that requires constant stirring (e.g. stir fry). The high walls of the wok even allow very vigorous stirring of the food - either with a spatula or by shaking the raised pan (this is why most woks have two handles). The unusual depth of the wok has another advantage - it traps the hot steam, which does not "escape" as in the case of a traditional frying pan, but circulates around the inside of the wok and thus softens the dish very quickly. This is why wok dishes are so succulent! Woks are usually coated pans, although there are also steel woks.
The versatility of the wok pan, which allows not only frying, but also stewing, cooking soups and even baking in the oven, makes it indispensable in any kitchen. There is perhaps only one dish that cannot be prepared on a wok: pancakes. But fortunately pancake pans we also have...
