This is a quick and rather unusual in taste (due to the presence of buckwheat groats) casserole. It will be a real pleasure for the palate.
Ingredients:
100 g buckwheat groats
1 medium onion
1 mushroom bouillon cube
2 handfuls of chanterelles
2 tablespoons butter
2 tablespoons olive oil
1 tablespoon grated cheese (preferably parmesan)
handful pumpkin seeds
125 ml 18% cream
salt and pepper to taste
Method of preparation:
Cook the semolina in water with broth for about 15 minutes. Brown the pumpkin seeds in a dry frying pan and add to the semolina. Then fry the finely diced onion and add to the porridge. Wash the chanterelles under running water, pat them gently dry and fry for a few minutes - halfway through frying, add the butter. Place the fried mushrooms in the bowl with the porridge. Stir in the Parmesan cheese and season with a little salt and pepper. In the pan where the chanterelles were fried, pour in the cream and bring to a boil over low heat. As soon as the sauce thickens, pour it into a jug. Place the ovenproof dish in a preheated oven (180°C) and bake for 15 minutes. Pour over the cream sauce before serving. Serve with rye bread.
