What vegetables can you use to make healthy and colourful pasta?

Vegetable pasta can be made from many vegetables. However, they must be quite firm. It's easiest to make pasta from long and straight varieties, but julienne peelers handle even round vegetables perfectly, such as beetroot or potato. What vegetables are best for making pasta?

  • Carrot, which, thanks to its distinctive colour, texture, and suitable length, works wonderfully as a substitute for traditional pasta. It tastes great in various salads, but you can also make a healthy version of spaghetti from it.
  • Courgette is another vegetable ideally suited for making pasta. It tastes excellent when combined with sauces, e.g., tomato, or in salads.
  • Celery and parsley are vegetables that, although not as colourful as carrot or courgette, work just as well as pasta. Simply cut them into ribbons, then blanch and serve, e.g., with cream sauce and sun-dried tomatoes.
  • Beetroot is a healthy and inexpensive vegetable from which you can also make pasta, preferably with a julienne peeler. Cooked al dente purple beetroot pasta served with a hint of pancetta, parsley, and chilli will appeal to everyone.

A Greek-style salad with courgette pasta is a fantastic way to enjoy a delicious, healthy, and visually striking dish.

Ingredients:

  • 2 courgettes
  • juice squeezed from half a lemon
  • 15 cherry tomatoes
  • a handful of green olives
  • a handful of black olives
  • 1 red onion
  • a handful of rocket
  • 5 tablespoons of olive oil
  • 2 teaspoons of honey
  • 100 g feta cheese
  • salt
  • pepper
  • Provence herbs

Preparation:

  1. Wash the courgettes and cut them into strips using a julienne peeler. Mix with a pinch of salt and 2 tablespoons of lemon juice. Set aside for about 30 minutes.
  2. Cut the cherry tomatoes into quarters.
  3. Halve the olives.
  4. Peel and finely dice the onion.
  5. Mix the remaining lemon juice with olive oil, honey, salt, pepper, and Provence herbs.
  6. Drain the courgette through a sieve, mix with the tomatoes, rocket, olives, onion, and sauce. Top the salad with diced feta cheese.

Ingredients:

  • 150 g noodle pasta
  • 1 cucumber
  • 1 carrot
  • 1 spring onion
  • a small handful of peanuts

Ingredients for the sauce:

  • 2 tablespoons light soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon peanut butter
  • 2 teaspoons honey
  • juice squeezed from half a lemon
  • 1 clove of garlic

Preparation:

  1. Break the noodle pasta into smaller pieces, cook according to package instructions. Leave to cool.
  2. Wash the cucumber and cut into strips using a spiralizer.
  3. Peel the carrot and cut using a vegetable sharpener.
  4. Finely chop the spring onion.
  5. Roughly chop the peanuts and toast in a dry pan.
  6. Prepare the sauce. Mix together soy sauce, rice vinegar, peanut butter, honey, lemon juice, and a garlic clove pressed through a garlic press.
  7. Combine all salad ingredients. Add the sauce and mix again.
