The Luki silicone sushi mat was designed by Luki Huber. The traditional Makisu mat is made of bamboo sticks connected by string. Lekue decided to challenge tradition and create a modern mat using silicone. Purists will no doubt be outraged, but the silicone mat has several advantages over the traditional one. The silicone mat is non-sticky, and it is much easier to keep clean than a traditional mat. This makes the job of preparing delicious sushi much easier.
